Ingredients:
1 box yellow cake mix + ingredients to prepare cupcakes
Cake Mate® Baking Cups
1 bottle Cake Mate® Silver Sugar Cupcake Gems
1 lb butter, softened
2 lb powdered sugar
1/4 tsp salt
1 tsp vanilla extract
1 tbsp milk
20 fresh cranberries
1 tbsp corn syrup
1/4 cup granulated sugar
Instructions:
STEP 1 Prepare cupcakes according to package directions.
STEP 2 While cupcakes are baking, make frosting. Beat softened butter in a large mixing bowl. Beat in salt and vanilla. Slowly add about half of the powdered sugar on low speed. Increase speed and beat for about 1 minute. Add the milk and remaining powdered sugar at low speed, then increase speed and beat until smooth and airy.
STEP 3 Frost cooled cupcakes using a pastry bag equipped with a large star-shaped decorating tip.
STEP 4 Sprinkle frosted cupcakes with Silver Sugar.
STEP 5 Using your fingertips or a small paint brush, coat cranberries in corn syrup and then roll in granulated sugar. Place 1 cranberry on top of each cupcake.
