Eggnog Mini Cupcakes

Ingredients:

1 2/3 cups All Purpose Flour

1 cup Sugar

1 ¼ tsp Baking Powder

¾ cup Salted Butter, room temperature

3 Egg Whites

½ tsp Pure Vanilla Extract

½ – ¾ tsp Nutmeg

¾ cup Eggnog

¼ cup Milk

1 package Cake Mate® Mini White Baking Cups

Icing Ingredients

½ cup Butter

½ cup Shortening

4 cups Powdered Sugar

4 Tbsp Eggnog

¼ tsp Rum Extract

1 tsp Nutmeg

1 package Cake Mate® Decorating Tips

1  package Cake Mate® Decorating Bags

1 Bottle of Cake Mate® Jingle Mix Nonpareils

Instructions:

STEP 1 Preheat oven to 350° F.

STEP 2 Whisk together flour, sugar and baking powder in a large mixing bowl.

STEP 3 Add butter, egg whites, vanilla, nutmeg, eggnog and milk; mix on medium speed until just smooth. Do not overmix.

STEP 4 Fill baking cups to just over half full.

STEP 5 Bake 15-18 minutes.

STEP 6 Cool mini cupcakes completely.

ICING INSTRUCTIONS

STEP 1 Combine butter and shortening, mixing until smooth.

STEP 2 Add 2 cups of powdered sugar and mix until smooth.

STEP 3 Add eggnog, rum extract and nutmeg and mix until smooth.

STEP 4 Add remaining powdered sugar, mixing until smooth.

STEP 5 Add a little more eggnog, if necessary, until desired consistency is reached.

STEP 6 Fit a Cake Mate® Decorating Bag with your preferred tip (we used #18), to pipe the icing on top of each mini cupcake.

STEP 7 Sprinkle each cupcake with Cake Mate® Jingle Mix Nonpareils.
