Instructions:

STEP 1 Preheat oven to 350° F.

STEP 2 In a stand mixer with the paddle attachment, combine the cake mix, egg, butter and gel food color until all the ingredients are combined and you have a doughy texture.

STEP 3 Line 2 baking sheets with parchment paper.

STEP 4 Use a 2 oz scoop or roll the dough into 1- 1½ inch balls and place on baking sheets about 1-2 inches apart.

STEP 5 Bake 10-12 minutes until the cookies are barely beginning to brown on the bottom.

STEP 6 Allow cookies to cool completely.

STEP 7 Flip ½ of the cookies over. Using Cake Mate® Decorating Icing in white, attach Cake Mate® tip #12 to pipe a layer of icing on ½ of the cookies.

STEP 8 Place the remaining ½ of the cookies in top of the icing, gently pushing down until the icing is at the edge of the cookie sandwich.

STEP 9 Pour the nonpareils into a shallow dish, then roll the edges of each cookie in the nonpareils to finish the cookie sandwiches.
